When the Spanish invaded Mexico during the early 1500′s, the Aztecs developed a new, gruesome recipe involving tomatoes. The fruit was served with the flesh of the Spanish invaders.

Some believe it was the Spanish Conquistador Hernando Cortés who brought the tomato to Europe after conquering the Aztec capital, Tenochtítlan, now Mexico City. Others believe Christopher Columbus brought plants back to Europe with him as early as 1493. An Italian herbal document in 1544 mentions the tomato as pomo d’oro, or golden apple. In 1597, English surgeon John Gerard published an herbal declaring that the tomato was poisonous and not to be eaten, prompting a century or two of excluding the fruit from British and colonial diets.

Several theories exist as to why so many believed the tomato was poison. One theory puts the blame on pewter plates, which had a high lead content. Acidic food like tomatoes caused some of the lead to leach into the food, leading to lead poisoning. However, lead poisoning occurs so gradually, over such a long period of time, that many consider it unlikely that the tomato would have been identified as the cause. A more likely theory is that the tomato is considered a member of the nightshade family of plants. Indeed, the tomato leaf is not safe to eat. Eating tomato leaves can cause vomiting, diarrhea and dizziness, and in severe cases, can lead to death.

Controversy also existed for a time over whether the tomato is a fruit or a vegetable. Botanically, the tomato is a berry, a subset of fruit, but its content is more like a vegetable. Perhaps the best way to describe the tomato is as “the fruit that behaves as vegetable.”

Mass-Produced Tomatoes

Today, tomatoes are grown around the world, adapted to a variety of growing conditions with thousands of cultivars. Tomatoes vary in size, color and flavor, from four-inch diameter beefsteak beauties to the elongated plum tomatoes prized in sauces. Tomatoes rightfully take their place along nutritional super foods, yet in some areas of the world, efforts to mass produce the fruit are causing concern among health experts.

In Florida, much of the land used for agriculture was carved out of the everglades. The sandy soil and humid air doesn’t suit the temperament of tomatoes, so farmers add quantities of chemical fertilizers to prompt growth. The fruit is shipped to market while still green, before the sun has ripened their taste and color – the tomatoes are treated with gas to make them look red. When compared to organic tomatoes, they are higher in sodium, while lower in vitamins and minerals. Many of these tomatoes wind up in fast food restaurants and grocery chain stores. It is recommended that consumers buy locally-grown tomatoes whenever possible. When not possible, canned tomatoes are more healthful – the tomatoes found in canned tomatoes are typically allowed to ripen before processing.

A study published in Cancer Research observed more positive effects in treating prostate tumors in rats when tomatoes were combined with broccoli. No allergies or adverse effects have been definitively associated with tomatoes.

The healthiest way to enjoy tomatoes is to either grow them in a home garden or purchase organically and locally grown tomatoes at a farmer’s market or health food store. During this study the participants’ fruit and vegetable intake was categorized according to color. The focus of this study was on four colors: orange/yellow, green, white and red/purple.

The orange/yellow variety of fruits and vegetables was found to be more protective against CVD than the other colors. The deeper the shade of orange/yellow the more protection the food offered.

In the dark orange/yellow group of foods, carrots were found to be the one main risk-reducing food concerning CVD. The participants who did not eat very many carrots had the smallest amount of risk reduction for CVD. Even so, they still received some reduced risk of CVD from their carrot intake.

Participants, who consumed 25 more grams, which is almost one-quarter cup of carrots, had a significant decrease in their risk of CVD. The participants who consumed 50 to 75 grams more demonstrated an even higher reduction in their risk of CVD. This study surely demonstrates how easily the risk of CVD can be reduced. The best-researched polyacetylenes found in the carrot are falcarindiol and falcarinol. Preliminary research has shown that the polyacetylenes that are found in the carrot have anti-aggregatory properties and anti-inflammatory properties. The anti-aggregatory properties assist in preventing the red blood cells from excessively clumping together.

The Carrot and Vision Health

Growing up our parents always told us to eat our carrots because they were good for our eyes. However, there are not many studies documenting the benefit of carrot consumption on human eye health. The majority of studies have focused on the carotenoid levels in the bloodstream and the carotenoids activity themselves, not the foods, like carrots, that contain them. Even so, there have been smaller scale studies done on humans that show benefits to the health of the eye with the consumption of carrots.

For example, one study showed that women who consumed carrots no less than twice weekly have a lower rate of glaucoma (optic nerve damage generally associated with excessive eye pressure) than women who only consumed carrots on occasion.

Geranyl acetate is one of the photonutrients present in the carrot seed and has been shown to reduce the risk of cataracts in animal studies.

The Anti-Cancer Benefits of Carrots

The majority of the research on the cancer fighting benefits of the carrot was in the area of colon cancer. Some participants in the studies actually drank carrot juice. Other research studied the various human cancer cells in the lab.

Much more research is necessary; however, the results of the studies that have been done to date have been very encouraging. Lab studies indicate that carrot extracts have the ability to inhibit the growth of the cancer cells of the colon. The polyacetylenes that are found in the carrot, especially falcarinol, have been particularly linked to inhibiting the growth of these cells.

Raw Carrots

Eat carrots as a salad by shredding them and then adding them to chopped beets and apples for a healthy snack.

Butter Steamed Carrots with Parsnips

Ingredients:

Six carrots
Six parsnips

To Prepare:

In a five to six quart pan, melt butter on medium/high heat. Add the carrot halves and a 3/4 cup water; cover and cook three minutes.

Uncover and shake the pan frequently until the liquid evaporates. Pour the vegetables into a bowl and salt them to taste.

Avoid serving small children coin-shaped slices of carrots. There is a chance they could choke on them. The best thing to do is cut the carrots into julienne strips.

Lycopene is a member of the carotenoid family and is responsible for the red pigment of the tomato. Studies done in the 1980′s showed that people who ate large amounts of tomatoes were far less likely to die from a variety of cancer types as compared to those who ate little to no tomatoes. Another stuyd showed that lycopene introduced into pre-existing cancer cell cultures also prevented the continued growth of those cultures.

In addition to its cancer prevention benefits, lycopene plays a key role in the antioxidant defense of the skin. It can raise your skins sun protection factor (SPF) by up to 33% acting as a natural internal sunblock! Animal studies have shown that tomatoes can also lower the risk for age related macular degeneration, but human studies have shown mixed results and need more research.

It should be noted that lycopene is fat soluble. This means it needs a bit of dietary fat to be transported into the bloodstream. So although a whole tomato is not a good source of the nutrient, any tomato-based food prepared with some type of oil will give your body the health benefits. Also organic tomatoes have three times as much lycopene as non-organic brands.

Cardiovascular protection

In addition to lycopene, vitamin C and beta-carotene also act as powerful antioxidants. These antioxidants preserve cell membranes from inflammatory damage which hinders the progression of atherosclerosis. In fact, a German study showed that men who suffered from heart attacks had much lower lycopene levels than those who did not.

Tomatoes also contain potassium, niacin, vitamin B6, and folate, all of which promote heart health. Potassium has been shown to help reduce systolic blood pressure. Niacin reduces your LDL levels while increasing your HDL cholesterol, which reduces your risk of heart attack. Vitamin B6 and folate help to lower levels of homocysteine in your body. High levels of homocysteine are often linked to an increase risk of heart disease and stroke.

What you should take away from reading this article is that if you aren’t already eating tomatoes, you should be.
